I have been a long-time fan of Eric Toensmeier, and everyone in food forest land has been talking about “edible trees” apart from fruit trees. But which leaves are edible and the next question you really do wonder then is what to do with them?
Eric Toensmeier is really a great inspiration to me because what he says is mostly scientifically based. Sometimes it’s good to have the “facts & figures” in order as well.
His latest work besides the amazing Edible forest Gardens which is still #1 for me as the best food forest book is just about how “nutritious” trees can be. And especially what to eat and how to prepare it as well. He doesn’t talk about tea or using the leaves to spice up dishes.
